Queso Diablo Preparation

Melt the Cheeses
In a medium saucepan over low heat, combine the cheddar cheese, Monterey Jack cheese, cream cheese, and heavy cream. Stir continuously until the cheeses are melted and the mixture is smooth.

Add the Flavorings
Stir in the diced tomatoes with green chilies, jalapeño peppers, garlic powder, onion powder, cumin, salt, and black pepper to the cheese mixture. Continue to cook for an additional 5-7 minutes, stirring occasionally, until heated through and well combined.

Adjust Seasoning
Taste the queso and adjust seasoning with additional salt and black pepper as necessary. Keep warm on low heat until ready to serve.

Fry the Tortillas
Cut the corn tortillas into triangles. Carefully add a handful of tortilla triangles to the hot oil, being cautious not to overcrowd the pot. Fry for 2-3 minutes or until they turn golden brown and crispy.

Drain and Season
Using a slotted spoon, remove the fried chips from the oil and place them on a paper towel-lined plate to drain excess oil. Sprinkle with salt while they are still hot. Continue frying the remaining tortilla triangles.

Serve
Serve the Queso Diablo hot alongside the freshly fried tortilla chips for dipping.
