Brisket Birria Preparation

    Prepare the Chiles

    Remove the stems and seeds from the dried guajillo and ancho chiles. Soak them in hot water for about 15-20 minutes until softened.

    Blend the Sauce

    In a blender, combine the soaked chiles, garlic, onion, cumin, oregano, and beef broth. Blend until smooth.

    Cook the Brisket

    In a large pot, season the brisket with salt and black pepper. Add the blended sauce and enough beef broth to cover the brisket. Bring to a boil, then reduce heat to low, cover, and simmer for 3-4 hours, until the brisket is fork-tender.

    Shred the Beef

    Remove the brisket from the pot and shred it with two forks. Return the shredded beef to the pot to absorb the sauce.

3-Cheese Queso Preparation

    Melt the Cheeses

    In a saucepan over medium heat, combine cream cheese, shredded cheddar cheese, shredded Monterey Jack cheese, and milk. Stir until melted and smooth.

    Stir in the diced jalapeño and season with salt. Keep warm on low heat.

    In a bowl, combine diced tomatoes, diced onion, chopped cilantro, lime juice, and salt. Mix well and set aside.

Cilantro Lime Rice Preparation

    Cook the Rice

    In a pot, combine rice and water. Bring to a boil, then reduce heat and cover. Cook for about 15-20 minutes until rice is tender and water is absorbed.

    Once cooked, fluff the rice with a fork and stir in lime juice, chopped cilantro, and salt to taste.

Black Beans Preparation

    In a saucepan, heat the canned black beans over medium heat. Season with cumin and salt. Cook until warmed through.

Assembly

    Assemble the Burrito

    On a warm flour tortilla, layer brisket birria, cheese queso, pico de gallo, cilantro lime rice, and black beans. Drizzle with salsa roja and garnish with fresh cilantro. Roll the tortilla tightly to enclose the filling.

    Cut the burrito in half and serve with additional salsa on the side.
