Brisket Birria Preparation

Prepare the Chiles
Remove the stems and seeds from the dried guajillo and ancho chiles. Soak them in hot water for about 15-20 minutes until softened.

Melt the Cheeses
In a saucepan over medium heat, combine cream cheese, shredded cheddar cheese, shredded Monterey Jack cheese, and milk. Stir until melted and smooth.

Stir in the diced jalapeño and season with salt. Keep warm on low heat.
Pico de Gallo Preparation

Mix Ingredients
In a bowl, combine diced tomatoes, diced onion, chopped cilantro, lime juice, and salt. Mix well and set aside.

Cook the Rice
In a pot, combine rice and water. Bring to a boil, then reduce heat and cover. Cook for about 15-20 minutes until rice is tender and water is absorbed.

Assemble the Burrito
On a warm flour tortilla, layer brisket birria, cheese queso, pico de gallo, cilantro lime rice, and black beans. Drizzle with salsa roja and garnish with fresh cilantro. Roll the tortilla tightly to enclose the filling.
