Prepare the Dough

Activate the Yeast
In a small bowl, combine warm water, sugar, and active dry yeast. Stir gently and let it sit for about 5-10 minutes until frothy.

Mix Dry Ingredients
In a large mixing bowl, whisk together all-purpose flour and salt.

Combine Ingredients
Make a well in the center of the flour mixture and add the activated yeast mixture and olive oil. Stir until a dough begins to form.

Knead the Dough
Transfer the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic.

Let It Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
Assemble the Pizza

Preheat Oven
Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat.

Shape the Dough
Once the dough has risen, punch it down and transfer it to a floured surface. Roll it out into a circle about 12-14 inches in diameter.

Prepare the Pizza Base
If using a pizza stone, sprinkle cornmeal on the pizza peel. If using a baking sheet, lightly grease it and sprinkle with cornmeal to prevent sticking.

Add Sauce and Toppings
Transfer the shaped dough to the pizza peel or baking sheet. Spread the tomato sauce evenly over the crust, then sprinkle the smoked provolone cheese followed by the pepperoni slices. Finally, sprinkle dried oregano and black pepper to taste.

Bake the Pizza
Carefully slide the pizza onto the preheated pizza stone or place the baking sheet in the oven. Bake for 12-15 minutes until the crust is golden brown and cheese is bubbling.

Remove the pizza from the oven and let it cool for a few minutes before slicing. Serve hot and enjoy!
