Method

Dough Preparation

  1. 1

    Activate Yeast

In a bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until frothy.

  2. 2

    Mix Dough Ingredients

In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and pour in the yeast mixture and olive oil.

  3. 3

    Knead the Dough

Mix until a dough forms, then transfer to a floured surface. Knead for about 8-10 minutes until smooth and elastic.

  4. 4

    Let Dough Rise

Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

Filling Preparation

  1. 5

    Prepare Filling

Slice the heritage pepperoni and smoked Provolone cheese into thin pieces. Grate the Asiago and Romano cheeses.

  2. 6

    Combine Filling Ingredients

In a bowl, mix the sliced pepperoni, smoked Provolone, grated Asiago, grated Romano, and Italian seasoning until well combined.

Assembling the Calzone

  1. 7

    Preheat Oven

Preheat your oven to 475°F (245°C) and prepare a baking sheet with parchment paper.

  2. 8

    Shape Calzone

Once the dough has risen, punch it down and divide it into 2-4 equal pieces. Roll out each piece into a circle about 8 inches in diameter.

  3. 9

    Fill Calzone

Place a generous amount of filling on one half of each dough circle, leaving a border around the edge.

  4. 10

    Seal the Calzone

Fold the other half of the dough over the filling and press the edges together. Use a fork to crimp the edges and seal.

  5. 11

    Bake Calzone

Transfer the calzones to the prepared baking sheet. Make a few slits on the top of each calzone to allow steam to escape. Bake for 15-20 minutes until golden brown.

Serving

  1. 12

    Serve with Marinara

Remove calzones from the oven and let them cool for a few minutes. Serve warm with marinara sauce for dipping.
