Preparing the Dough

Activate Yeast
In a small bowl, combine warm water and sugar. Sprinkle yeast over the water and let it sit for about 5-10 minutes until foamy.

Make Dough
In a large bowl, mix the flour and salt. Make a well in the center and add the activated yeast mixture and olive oil. Mix until a dough forms.

Knead Dough
Transfer the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.

Let Dough Rise
Place the dough in a lightly greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Prepare Chicken
Cook the sliced chicken breast in a skillet over medium heat until fully cooked, about 5-7 minutes. Season with 1 tsp of mariachi spice and set aside.

Chop Vegetables
Dice the Roma tomatoes and slice the jalapeño peppers thinly. Remove seeds from jalapeños for less heat, if desired.
Assembling and Baking the Pizza

Preheat Oven
Preheat your oven to 475°F (245°C).

Roll Out Dough
Once the dough has risen, punch it down and roll it out on a floured surface to your desired thickness.

Add Toppings
Transfer the rolled-out dough to a pizza stone or baking sheet. Spread the shredded mozzarella cheese evenly over the base, followed by the cooked chicken, diced tomatoes, and sliced jalapeños. Sprinkle the remaining mariachi spice over the top.

Bake Pizza
Bake the pizza in the preheated oven for 12-15 minutes, or until the crust is golden and the cheese is bubbly.

Remove the pizza from the oven, allow it to cool slightly, and serve with a side of sour cream for dipping.
