Mango Salsa Preparation

Combine Ingredients
In a medium bowl, combine the diced mango, diced tomato, finely chopped red onion, and jalapeno. Mix gently to combine.

Add Lime and Season
Pour in the lime juice and sprinkle with salt. Add the chopped cilantro and mix well. Taste and adjust seasoning if necessary.

Chill
Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow flavors to meld.
Tortilla Chips Preparation

Cut Tortillas
Stack the corn tortillas and cut them into triangle wedges (like pizza slices). You should have about 8 wedges per tortilla.

Heat Oil
In a large skillet, heat the vegetable oil over medium heat until hot but not smoking.

Fry Chips
Carefully add the tortilla wedges in batches to the hot oil. Fry them for about 2-3 minutes or until golden and crispy, turning occasionally.

Drain and Season
Using a slotted spoon, remove the chips from the oil and transfer them to a plate lined with paper towels to drain excess oil. While still warm, sprinkle with salt.

Once the salsa has chilled and the chips are ready, serve the mango salsa in a bowl alongside the freshly made tortilla chips.
