    Prepare the Ingredients

    Dice the chicken breast, bell pepper, and onion. Mince the garlic. If using fresh tomatoes, dice them. Slice the Andouille sausage.

Cooking

    Sauté the Protein

    In a large skillet or Dutch oven, heat the olive oil over medium heat. Add the diced chicken breast and cook until browned, about 5-7 minutes. Remove and set aside.

    Cook the Sausage

    In the same skillet, add the sliced Andouille sausage and sauté for about 3-4 minutes until slightly crispy. Add the shrimp and cook until they turn pink, about 2-3 minutes. Remove and set aside with the chicken.

    Sauté the Vegetables

    In the same skillet, add the diced onion, bell pepper, and minced garlic. Cook until the vegetables are softened, about 5 minutes.

    Combine Ingredients

    Add the diced tomatoes, cooked chicken, sausage, shrimp, Cajun seasoning, salt, black pepper, bay leaves, and rice to the skillet. Stir well to combine.

    Add Broth

    Pour in the chicken broth and bring the mixture to a boil. Reduce heat to low, cover, and simmer for about 20 minutes, or until the rice is cooked and has absorbed the liquid.

    Finish It Off

    Once the rice is cooked, remove the bay leaves. Adjust seasoning with salt, black pepper, and hot sauce to taste. Stir well before serving.
