    Boil the Eggs

    Place the large eggs in a pot and cover them with cold water. Bring the water to a boil over medium-high heat. Once boiling, cover the pot, remove it from heat, and let it sit for 12 minutes.

    Cool the Eggs

    After 12 minutes, transfer the eggs to a bowl of ice water to cool for 5-10 minutes. This will make peeling easier.

    Peel the Eggs

    Gently tap each egg on a hard surface and peel under running water to remove the shell. Cut each egg in half lengthwise and remove the yolks to a mixing bowl.

Making the Filling

    Mix the Filling

    In the mixing bowl with the egg yolks, add mayonnaise, Dijon mustard, salt, black pepper, Cajun seasoning, and chopped bacon. Mash together with a fork until smooth and creamy.

    Fill the Egg Whites

    Spoon or pipe the filling into the hollowed egg whites. Be generous with the filling!

Garnishing

    Add Jalapenos

    Top each filled egg half with a slice of bread & butter jalapeno.

    Sprinkle with Paprika and Chives

    Finally, sprinkle paprika over the eggs and garnish with chopped chives for an extra touch of flavor and color.
