    Prepare Ingredients

    Chop the onion, bell pepper, and green onions. Mince the garlic. Slice the Andouille sausage and dice the chicken breast into bite-sized pieces.

Cooking

    Sauté the Sausage and Chicken

    In a large pot or Dutch oven, heat olive oil over medium heat. Add the Andouille sausage and chicken pieces. Sauté until the chicken is browned and cooked through, about 5-7 minutes.

    Add Vegetables

    Stir in the chopped onion, bell pepper, and minced garlic. Cook until the vegetables are soft, about 4-5 minutes.

    Incorporate Rice and Spices

    Add the long-grain rice to the pot, mixing well with the sautéed ingredients. Then, stir in the Cajun seasoning, salt, black pepper, paprika, and bay leaves.

    Add Liquids

    Pour in the chicken broth and add the diced tomatoes (with their juices). Stir everything together and bring to a boil.

    Simmer

    Once boiling, reduce the heat to low, cover, and let simmer for 20-25 minutes or until the rice is tender and has absorbed most of the liquid.

    Add Shrimp

    In the last 5 minutes of cooking, add the shrimp to the pot. Stir gently to combine and cover until the shrimp are pink and cooked through.

    Garnish and Serve

    Remove bay leaves. Fluff the jambalaya with a fork, garnish with green onions, and serve hot.
