Chicken Preparation

Marinate Chicken
In a large bowl, combine buttermilk, salt, black pepper, garlic powder, and paprika. Add chicken thighs and ensure they are fully submerged. Cover and refrigerate for at least 2 hours or overnight for best flavor.

In a separate bowl, mix together the all-purpose flour and cornstarch. Set aside for breading.
Frying Chicken

In a large pot, heat oil over medium-high heat until it reaches 350°F (175°C).

Remove chicken from buttermilk marinade, allowing excess to drip off. Dredge each piece in the flour-cornstarch mixture, ensuring an even coating. Fry chicken in batches for about 6-8 minutes or until golden brown and cooked through. Use a thermometer to check internal temperature (should be 165°F/75°C).

Once fried, place chicken on a paper towel-lined plate to drain excess oil.

In a small saucepan over low heat, combine honey and red pepper flakes. Stir gently until warmed through. Remove from heat and set aside.
