In a mixing bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until frothy.

Add flour, salt, and olive oil to the yeast mixture. Stir until a dough forms.

Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth.

Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Cut the chicken thighs into bite-sized pieces. Season with salt and pepper.

Set up a breading station with flour, beaten eggs, and panko breadcrumbs. Dredge chicken pieces in flour, dip in eggs, and coat with breadcrumbs.

Heat oil in a deep skillet. Fry the breaded chicken pieces until golden brown and cooked through, about 5-7 minutes. Drain on paper towels.
