    Make the Roux

    In a large pot, heat the vegetable oil over medium heat. Gradually whisk in the flour, stirring constantly.

    Continue to cook, stirring constantly, until the roux turns a deep brown color, similar to chocolate. This should take about 20-30 minutes.

    Add Vegetables

    Once the roux is dark, add the chopped onion, bell pepper, and celery to the pot.

    Sauté the vegetables in the roux for about 5-7 minutes, until they are softened.

    Cook the Meats

    Add the sliced Andouille sausage and chopped chicken thighs to the pot.

    Cook for another 5-7 minutes, stirring occasionally, until the chicken is browned.

    Add the Broth and Seasonings

    Pour in the chicken broth and stir well to combine.

    Add the sliced okra, thyme, cayenne pepper, bay leaves, salt, and black pepper.

    Simmer the Gumbo
