    Prepare the jalapeños by slicing them in half lengthwise and removing the seeds and membranes. This will help reduce the heat and make them easier to stuff.

    Cook the hardwood smoked bacon in a skillet over medium heat until crispy. Once cooked, remove from the skillet and place on paper towels to drain excess fat. Once cooled, chop the bacon into small pieces.

    In a mixing bowl, combine the chopped bacon, smoked provolone cheese, and asiago cheese. Mix until well combined.

Stuffing the Jalapeños

    Using a spoon, fill each jalapeño half with the cheese and bacon mixture, pressing gently to ensure the filling holds.

Baking

    Place the stuffed jalapeños on a baking tray lined with parchment paper.
