    Prepare the Filet Mignon

    Take the filet mignon steaks out of the refrigerator and let them sit at room temperature for about 30 minutes before cooking. This allows them to cook more evenly.

    Season the steaks

    Pat the steaks dry with paper towels. Rub both sides of the steaks with olive oil, salt, and black pepper. Ensure they are evenly coated.

    Sear the steaks

    Preheat a skillet or grill over high heat. Once hot, add the steaks to the pan. Sear for about 4-5 minutes on each side for medium-rare, depending on the thickness of the steak.

    Rest the steaks

    Once cooked to your liking, remove the steaks from the skillet and let them rest on a plate covered with foil for about 5-10 minutes.

    Roast the garlic

    Preheat your oven to 400°F (200°C). Take the garlic cloves and wrap them in aluminum foil with a drizzle of olive oil. Roast them in the oven for about 30-35 minutes until soft and caramelized.

    Prepare the garlic butter

    In a mixing bowl, combine the softened unsalted butter, roasted garlic (squeezed out of their skins), fresh parsley, lemon juice, salt, and black pepper. Mix until well combined.

    Chill the garlic butter

    Transfer the garlic butter mixture onto a piece of parchment paper, roll it into a log shape, and twist the ends to seal. Refrigerate for at least 30 minutes until firm.
