Dough Preparation

    Activate Yeast

    In a small bowl, combine warm water, sugar, and active dry yeast. Allow to sit for about 5-10 minutes until frothy.

    Mix Dough Ingredients

    In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil.

    Knead Dough

    Mix until a dough forms, then knead on a floured surface for about 8-10 minutes until smooth and elastic.

    Let Dough Rise

    Place the dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.

Filling Preparation

    Prepare Fillings

    While the dough is rising, prepare your two chosen toppings by chopping or cooking as needed. Grate the smoked Provolone cheese.

Assembling Calzones

    Preheat Oven

    Preheat your oven to 475°F (245°C).

    Shape Dough

    Once the dough has risen, punch it down and divide it into 4 equal pieces. Roll each piece into a circle about 10 inches in diameter.

    Add Fillings

    On one half of each dough circle, layer the smoked Provolone cheese, followed by your chosen toppings. Leave a small border around the edge.

    Seal Calzones

    Fold the dough over the filling to create a half-moon shape. Press the edges together and crimp with a fork to seal.

    Place the sealed calzones on a baking sheet lined with parchment paper. Sprinkle grated Asiago and Romano cheese on top, and sprinkle with Italian seasoning.
