Cook the Chicken
Heat a skillet over medium-high heat. Add the marinated chicken thighs and cook for about 5-7 minutes on each side or until cooked through and internal temperature reaches 165°F (75°C). Remove from heat and let rest before slicing.
Cilantro Lime Rice Preparation

Cook the Rice
In a saucepan, bring 2 cups of water to a boil. Add 1 cup of white rice and 1 teaspoon of salt. Stir, reduce to low heat, cover, and simmer for 18-20 minutes or until the rice is cooked and water is absorbed.

Combine Ingredients
In a bowl, combine the diced tomatoes, diced red onion, minced jalapeño, lime juice, chopped cilantro, and salt. Mix well and let sit for at least 10 minutes to meld the flavors.

In a bowl, layer the cilantro lime rice, black beans, sliced Cholula hot & sweet chicken, pico de gallo, a dollop of sour cream, and a sprinkle of cotija cheese on top. Serve immediately.
