    Wash and peel the Russet potatoes. Slice them thinly using a mandoline slicer or a sharp knife, aiming for about 1/8 inch thickness.

    Place the potato slices in a bowl of cold water for at least 30 minutes to remove excess starch. Drain and pat them dry thoroughly with a clean kitchen towel.

    In a large heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a kitchen thermometer to ensure the oil reaches the proper temperature.

    Carefully add a handful of potato slices to the hot oil, being careful not to overcrowd the pot. Fry them for 2-3 minutes or until they turn golden brown.
