Cook the Chicken
Preheat your oven to 375°F (190°C). Place the chicken breasts on a baking sheet and season with salt and pepper. Bake for 25-30 minutes or until cooked through and juices run clear. Remove from the oven and let cool before slicing.

Prepare the Fruits and Nuts
While the chicken and bacon are cooking, slice the apples and chop the peanuts. Combine the apples, peanuts, and dried cranberries in a large bowl.
Vinaigrette Preparation

Make the Vinaigrette
In a bowl, whisk together the apple cider vinegar, olive oil, honey, Dijon mustard, salt, and black pepper until well combined. Adjust seasoning to taste.
Assembly

Combine All Ingredients
In a large serving dish, combine the sliced chicken, crispy bacon, apple mixture, and crumbled bleu cheese. Drizzle the apple cider vinaigrette over the top and toss gently to combine.
