Main Preparation

    Cook the Chicken

    Preheat your oven to 375°F (190°C). Place the chicken breasts on a baking sheet and season with salt and pepper. Bake for 25-30 minutes or until cooked through and juices run clear. Remove from the oven and let cool before slicing.

    Cook the Bacon

    In a skillet over medium heat, cook the bacon until crispy. Remove from the skillet and drain on paper towels. Once cooled, chop into bite-sized pieces.

    Prepare the Fruits and Nuts

    While the chicken and bacon are cooking, slice the apples and chop the peanuts. Combine the apples, peanuts, and dried cranberries in a large bowl.

Vinaigrette Preparation

    Make the Vinaigrette

    In a bowl, whisk together the apple cider vinegar, olive oil, honey, Dijon mustard, salt, and black pepper until well combined. Adjust seasoning to taste.
