Crust Preparation

Preheat Oven
Preheat your oven to 350°F (175°C).

Mix Crust Ingredients
In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated.

Form the Crust
Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake in the preheated oven for 8-10 minutes until golden brown. Remove from oven and allow to cool.

In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy.

Add Sugar and Vanilla
Gradually add the granulated sugar and vanilla extract, continuing to beat until well blended.

Incorporate Sour Cream
Mix in the sour cream until fully combined.

Add Eggs
Add the eggs one at a time, mixing on low speed just until blended after each addition. Be careful not to overmix.

Pour Filling
Pour the cream cheese filling into the cooled crust, spreading it evenly.

Bake Cheesecake
Bake in the preheated oven for 50-60 minutes, or until the center is set and slightly wobbly. Turn off the oven and leave the cheesecake inside for 1 hour.

Remove the cheesecake from the oven and let it cool to room temperature before refrigerating for at least 4 hours or overnight.

In a medium bowl, combine the sliced strawberries, granulated sugar, and lemon juice. Toss gently to coat the strawberries.
