Preparation of Filling

Cook the Chicken
In a medium pan, cook the chicken breast over medium heat until fully cooked, about 7-10 minutes. Let it cool, then shred or chop into small pieces.

Cook the Andouille Sausage
In the same pan, slice the Andouille sausage and cook until browned and heated through, about 5 minutes.

Combine Filling Ingredients
In a mixing bowl, combine the cooked chicken, Andouille sausage, Cheddar Jack cheese, and Mango barbeque sauce. Mix well until fully blended.
Assembling the Spring Rolls

Prepare Spring Roll Wrappers
Take one spring roll wrapper and lay it flat on a clean surface. Dip your fingers in water and moisten the edges of the wrapper to make it easier to seal.

Fill and Roll
Place about 2 tablespoons of the filling mixture in the center of the wrapper. Fold the bottom edge over the filling, then fold in the sides and roll tightly to seal. Repeat with remaining wrappers and filling.
Frying the Spring Rolls

Heat the Oil
In a deep frying pan or wok, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F).

Fry the Spring Rolls
Carefully add the spring rolls to the hot oil, a few at a time, making sure not to overcrowd the pan. Fry for about 3-4 minutes or until golden brown and crispy. Remove and drain on paper towels.

Serve the Cajun spring rolls hot with extra Mango barbeque sauce for dipping.
