Method

Preparing the Salmon

    Season the Salmon

    Pat the Verlasso salmon fillets dry with paper towels. Season both sides with Cajun seasoning, salt, and black pepper.

    Sear the Salmon

    In a large skillet, heat olive oil over medium-high heat. Once hot, add the salmon fillets skin-side down and cook for about 4-5 minutes on each side until blackened and cooked through. Remove from heat and let rest.

Making the Dirty Fried Rice

    Prepare the Ingredients

    In a large skillet or wok, heat olive oil over medium heat. Add the diced Andouille sausage, bell pepper, and garlic. Sauté for 3-4 minutes until the sausage is browned and the vegetables are tender.

    Add Rice and Eggs

    Stir in the cooked rice and chicken broth, mixing well. Push the rice mixture to one side of the skillet and pour the beaten eggs into the empty space. Scramble the eggs until fully cooked, then mix with the rice.

    Finish the Fried Rice

    Add the soy sauce and chopped green onions to the rice mixture. Stir well to combine and cook for an additional 2-3 minutes until heated through. Remove from heat.

Making the Cajun Beurre Blanc

    Sauté Shallots

    In a small saucepan, melt 1/4 cup of butter over medium heat. Add the finely chopped shallots and sauté until they are translucent, about 3-4 minutes.

    Add Wine and Reduce

    Pour in the white wine and bring to a simmer. Cook until the mixture is reduced by half, about 5-7 minutes.

    Finish the Sauce

    Reduce heat to low and whisk in the heavy cream, Cajun seasoning, and salt. Gradually add the remaining butter, piece by piece, whisking constantly until the sauce is smooth. Stir in lemon juice before serving.
