Preparation
- 1
Caramelize the Onions
In a skillet over medium heat, add 1 tablespoon of olive oil. Once heated, add the sliced onions and a pinch of salt. Cook slowly, stirring occasionally, for about 20-25 minutes or until the onions are golden brown and caramelized. Remove from heat and set aside.
- 2
Sauté the Mushrooms
In the same skillet, add another tablespoon of olive oil. Add the sliced wild mushrooms and cook over medium-high heat for about 5-7 minutes until they are tender and slightly browned. Season with salt and pepper to taste, then set aside.

Build the Dish
Preheat your oven to 425°F (220°C). On a baking sheet or pizza stone, spread the shredded mozzarella evenly across the base. Follow with the caramelized onions, sautéed mushrooms, and wilted greens (chard and kale). Top with quartered figs and crumbled chevre.
- 5
Drizzle and Bake
Drizzle the balsamic glaze evenly over the top. Place the dish in the preheated oven and bake for about 15-20 minutes, or until the cheese is melted and bubbly, and the edges are golden.

Serve
Remove from the oven, allow to cool slightly, then slice and serve warm. Enjoy your Woodland dish!
