Cook the Kobe Beef Patties
In the same skillet, cook the Kobe beef patties over medium-high heat for about 3-4 minutes on each side for medium-rare. Place a slice of sharp cheddar cheese on each patty during the last minute of cooking to melt.

Toast the Brioche Buns
While the burgers are cooking, split the brioche buns and toast them lightly on the grill or in a toaster until golden brown.

Roast the Garlic
Preheat the oven to 400°F (200°C). Cut the top off the head of garlic to expose the cloves. Drizzle with a little olive oil, wrap in foil, and roast in the oven for 30-35 minutes until soft. Allow to cool, then squeeze the roasted garlic cloves into a bowl.

Make the Aioli
In a bowl, mix the roasted garlic, mayonnaise, lemon juice, and olive oil. Whisk until smooth. Season with salt and pepper to taste.
Assemble the Burger

Layer the Ingredients
On the bottom half of each toasted brioche bun, spread a generous amount of roasted garlic aioli. Top with the Kobe beef patty with melted cheese, followed by crispy bacon, fresh arugula, and tomato slices. Add the top half of the bun.

Serve
Serve the Kobe burgers immediately while hot with extra aioli on the side if desired.
