Chop the garlic, red bell pepper, and jalapeño. If using fresh corn, cut the kernels off the cob. If using frozen corn, measure out the required amount.

Cook the Chorizo
In a large skillet, heat the olive oil over medium heat. Add the chopped garlic and sauté for about 1 minute until fragrant. Add the chorizo and cook until browned, about 5-7 minutes. Make sure to crumble the chorizo as it cooks.

Add Vegetables
Once the chorizo is cooked, add the red bell pepper and corn to the skillet. Cook for an additional 5 minutes, stirring occasionally until the vegetables are tender.

Mix in Cheese and Jalapeño
Stir in the shredded cheddar cheese and diced jalapeño. Cook until the cheese is melted and everything is well combined.

Prepare the Cream Sauce
In a small bowl, combine the sour cream and diced green chili. Mix well to create the green chili crema.
