Preparing the Quinoa

Rinse the Quinoa
Start by rinsing 1 cup of quinoa under cold water in a fine mesh strainer to remove any bitterness.

Cook the Quinoa
In a medium saucepan, combine the rinsed quinoa and 2 cups of vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the broth is absorbed. Remove from heat and let it sit, covered, for 5 minutes.

Fluff the Quinoa
After resting, fluff the quinoa with a fork and set aside.
Preparing the Salmon

Season the Salmon
Pat the salmon fillets dry with paper towels. Season both sides with salt and black pepper.

Heat the Olive Oil
In a large skillet, heat 2 tablespoons of olive oil over medium-high heat until shimmering.

Sear the Salmon
Carefully place the salmon fillets in the skillet, skin side down. Cook for about 4-5 minutes without moving them, until the skin is crispy. Flip the fillets and cook for another 3-4 minutes until the salmon is cooked through but still moist.

Add Lemon and Dill
During the last minute of cooking, squeeze the juice of 1 lemon over the salmon and sprinkle with 2 tablespoons of fresh dill.

Remove from Heat
Once cooked, remove the salmon from the skillet and place it on a plate.
Serving

Plate the Dish
Serve the seared salmon fillets over a bed of fluffy quinoa. Optionally, garnish with additional lemon wedges and dill.
