Preparing the Beets

Roast the Beets
Preheat the oven to 400°F (200°C). Wrap the beets in aluminum foil and place them on a baking sheet. Roast for 45-60 minutes until tender. Allow to cool, then peel and slice.

Candy the Hazelnuts
In a saucepan, combine sugar and water over medium heat, stirring until sugar dissolves. Add hazelnuts and simmer until the mixture thickens and coats the nuts, about 5-7 minutes. Pour onto a parchment-lined baking sheet and let cool. Once cool, break apart any clumps.

Combine Ingredients
In a large salad bowl, combine the organic mixed greens, sliced roasted beets, and crispy goat cheese. Top with candied hazelnuts.

Drizzle the balsamic dressing over the salad just before serving. Toss gently to combine and serve immediately.
