Polenta Cakes

Method

Preparing the Polenta Cakes

  1. 1

    Cook the Polenta

In a large pot, bring 4 cups of water and 1 tsp of salt to a boil. Gradually whisk in 1 cup of cornmeal, stirring continuously to avoid lumps.

  2. 2

    Add Cheeses and Jalapeños

Once the polenta thickens (about 5-7 minutes), remove from heat and stir in 1 cup of grated cheddar cheese, 4 oz of softened cream cheese, and 2 tbsp of diced jalapeños until well combined.

  3. 3

    Incorporate Corn

Fold in 1 cup of corn into the polenta mixture. Mix well to distribute evenly.

  4. 4

    Shape and Chill

Spread the polenta mixture into a greased baking dish, smoothing the top. Allow it to cool to room temperature, then refrigerate for at least 2 hours to set.

  5. 5

    Cut and Fry

Once set, cut the polenta into cakes. Heat a non-stick skillet over medium heat with a little oil. Fry the cakes for about 3-4 minutes on each side until golden brown and crispy.

Making the Tomatillo Sauce

  1. 6

    Prepare the Tomatillo Sauce

In a blender, combine 2 cups of chopped tomatillos, 1 medium chopped onion, 1 cup of chopped cilantro, and 2 tbsp of lime juice. Blend until smooth. Add salt to taste.

Serving

  1. 7

    Plate the Dish

Place the crispy polenta cakes on a serving platter. Drizzle with tomatillo sauce and garnish with 0.5 cup of fresh chopped cilantro.
