Preparing the Polenta Cakes

Add Cheeses and Jalapeños
Once the polenta thickens (about 5-7 minutes), remove from heat and stir in 1 cup of grated cheddar cheese, 4 oz of softened cream cheese, and 2 tbsp of diced jalapeños until well combined.

Incorporate Corn
Fold in 1 cup of corn into the polenta mixture. Mix well to distribute evenly.

Shape and Chill
Spread the polenta mixture into a greased baking dish, smoothing the top. Allow it to cool to room temperature, then refrigerate for at least 2 hours to set.

Cut and Fry
Once set, cut the polenta into cakes. Heat a non-stick skillet over medium heat with a little oil. Fry the cakes for about 3-4 minutes on each side until golden brown and crispy.

Place the crispy polenta cakes on a serving platter. Drizzle with tomatillo sauce and garnish with 0.5 cup of fresh chopped cilantro.
