    Boil the Eggs

    Place the eggs in a pot and cover with water. Bring to a boil over medium-high heat. Once boiling, cover the pot and remove from heat. Let sit for 12 minutes.

    Prepare the Bacon

    While the eggs are sitting, cook the bacon in a skillet over medium heat until crispy. Remove from the skillet and drain on paper towels. Once cooled, crumble the bacon into small pieces.

    Peel the Eggs

    Once the eggs have cooled, peel them and slice them in half lengthwise. Carefully remove the yolks and place them in a bowl.

    Make the Filling

    Mash the yolks with a fork and add the mayonnaise, Dijon mustard, salt, black pepper, and half of the crumbled bacon. Mix until well combined.

    Fill the Egg Whites

    Spoon or pipe the yolk mixture back into the egg whites.

    Garnish and Serve

    Top each filled egg with the remaining crumbled bacon, a sprinkle of paprika, and chopped chives or green onions. Serve chilled.
