Prepare the Ahi Tuna
Slice the ahi tuna into thin, even slices. Season with salt and pepper to taste. Set aside in the refrigerator to chill.

Cook the Vegetables
In a large skillet, heat olive oil over medium heat. Add sliced bell peppers, zucchini, and carrot. Stir-fry for about 5-7 minutes or until vegetables are tender but still crisp. Add soy sauce and sesame seeds, and stir to combine. Remove from heat.

Fry the Wonton Strips
In a small pan, heat oil for frying. Once hot, add wonton strips and fry until golden brown and crispy. Drain on paper towels.

Plate and Serve
On a serving plate, arrange the chilled ahi tuna slices. Drizzle with unagi sauce and top with the pan-fried vegetables. Garnish with wonton strips for crunch. Serve immediately.
