Cooking Pasta

    Boil Water

    Fill a large pot with water and add 1 tablespoon of salt. Bring the water to a rolling boil over high heat.

    Cook Penne

    Once the water is boiling, add 2 cups of penne pasta. Cook according to package instructions until al dente, usually about 10-12 minutes. Stir occasionally to prevent sticking.

    Drain Pasta

    Once cooked, drain the pasta in a colander and set aside. Reserve a small cup of the pasta water for later use.

Making Pesto Sauce

    Blend Ingredients

    In a food processor, combine 2 cups of fresh basil leaves, 1 tablespoon of pine nuts, and 2 minced garlic cloves. Pulse until finely chopped.

    Add Cheese and Oil

    Add 1 cup of grated Parmesan cheese, 1 cup of olive oil, 1 teaspoon of salt, and 1 teaspoon of black pepper to the food processor. Blend until smooth and creamy.

    Adjust Consistency

    If the pesto is too thick, add a little reserved pasta water to reach desired consistency and blend again.

Combining Pasta and Pesto

    Mix Pasta and Pesto

    In a large mixing bowl, combine the drained penne pasta with the prepared pesto sauce. Toss until the pasta is evenly coated.

    Serve

    Divide the pesto penne into serving bowls. If desired, top with halved cherry tomatoes, drizzle with balsamic glaze, and sprinkle extra Parmesan cheese on top.
