Noodles Preparation

Cook the Noodles
Bring a large pot of water to a boil. Add the Lo Mein noodles and cook according to package instructions until al dente, usually about 4-5 minutes. Drain and rinse with cold water to stop the cooking process.

Prep the Vegetables
While the noodles are cooking, wash and slice the bell pepper, julienne the carrot, and rinse the snow peas. Chop the green onions, keeping the green and white parts separate.

Prepare the Sauce
In a small bowl, whisk together the soy sauce, sesame oil, minced garlic, minced ginger, brown sugar, cornstarch, and water until smooth. Set aside.
Stir-Frying

Stir-Fry the Vegetables
In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Add the sliced bell pepper, julienned carrot, and snow peas. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.

Combine Noodles and Sauce
Add the cooked Lo Mein noodles to the skillet along with the prepared sauce. Toss everything together and cook for an additional 2-3 minutes, allowing the sauce to thicken and coat the noodles evenly.

Finish with Green Onions
Add the chopped green onions, reserving a small amount for garnish. Toss well and remove from heat.
