Mojo Marinated Pulled Pork

    Prepare the Mojo Marinade

    In a blender, combine orange juice, lime juice, garlic cloves, cumin, oregano, olive oil, salt, and black pepper. Blend until smooth.

    Marinate the Pork

    Place the pork shoulder in a large zip-top bag or a bowl. Pour the marinade over the pork, ensuring it is well coated. Seal the bag or cover the bowl and refrigerate for at least 4 hours, preferably overnight.

    Cook the Pork

    Preheat your oven to 300°F (150°C). Remove the pork from the marinade and place it in a roasting pan. Cover with foil and bake for about 3-4 hours, or until the pork is tender and easily shredded.

    Shred the Pork

    Once cooked, remove the pork from the oven and let it rest for 20 minutes. Use two forks to shred the pork into bite-sized pieces.

    Assemble the Sandwich

    Slice the sub rolls in half. Layer the shredded mojo pork, shaved ham, and swiss cheese on the bottom half of each roll.

    Add Giardiniera

    Top the meat and cheese with giardiniera to add a tangy crunch.

    Close and Serve

    Place the top half of the roll on the sandwich. You can serve it as is or press it in a panini press until the cheese is melted and the bread is crispy.
