Prepare Bacon Jam

In a skillet, cook the bacon over medium heat until crispy. Remove bacon and drain on paper towels. Leave about 1 tablespoon of bacon fat in the skillet, add brown sugar, and stir until it caramelizes. Chop the bacon and add it back into the skillet. Cook for another 5 minutes until thickened, then set aside.

Make Gorgonzola Cream

In a saucepan, combine heavy cream and Gorgonzola cheese over medium heat. Stir continuously until the cheese melts and the mixture thickens. Season with salt and pepper to taste, then set aside.

Grill the Filet

Preheat the grill to high heat. Season the filet mignon with olive oil, salt, and black pepper. Grill for about 4-5 minutes on each side for medium-rare, or until cooked to your desired doneness. Remove from grill and let rest for a few minutes.

Prepare Today’s Vegetable

Blanch or sauté the fresh vegetables in a little olive oil until tender but still crisp. Season with salt and pepper.

Serve

Plate the filet with a generous drizzle of Gorgonzola cream, a spoonful of bacon jam, a serving of mashed potatoes, and today’s vegetable on the side.
