Cook the Sushi Rice

Rinse sushi rice under cold water until the water runs clear. Combine with water in a rice cooker or pot and cook according to package instructions. Once cooked, let it cool slightly.

Season the Rice

In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Pour this mixture over the warm rice and gently fold it in to season the rice. Let it cool to room temperature.

Shape the Rice

Once the rice is cool, take small portions (about 2 tablespoons each) and press them into rectangular shapes. Heat sesame oil in a non-stick skillet over medium-high heat and fry the rice pieces until golden brown and crispy on both sides. Remove and drain on paper towels.

Prepare the Ahi Tuna

While the rice is cooking, slice the ahi tuna into thin strips. Marinate with soy sauce for 10 minutes.

Assemble the Dish

Top each crispy rice piece with a slice of marinated ahi tuna, a drizzle of spicy mayo, and a sprinkle of sesame seeds. Serve with seasonal veggies and garnish with chopped green onions.
