Instructions
Prepare the Chicken
Season chicken breasts with salt and black pepper. Heat olive oil in a skillet over medium heat. Add chicken and cook until golden brown and cooked through, about 6-7 minutes per side. Remove from skillet and let rest.
Make the Biscuits
In a large bowl, mix flour, baking powder, and a pinch of salt. Cut in butter until the mixture resembles coarse crumbs. Stir in milk until just combined. Do not overmix.
Bake the Biscuits
Preheat your oven to 425°F (220°C). Drop spoonfuls of biscuit dough onto a baking sheet. Bake for 12-15 minutes or until golden brown.
Assemble the Dish
Slice the cooked chicken and serve it over the biscuits. Drizzle with Lusty Monk Mustard. Serve with seasonal slaw, and a side of mac & cheese or potato salad, and a seasonal can of wine.
