Prepare the Biscuit Dough

In a large bowl, mix the flour, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the milk until just combined. Knead gently and roll out to about 1-inch thickness.

Bake the Biscuits

Preheat the oven to 425°F (220°C). Cut the dough into rounds and place on a baking sheet. Bake for 12-15 minutes until golden brown.

Marinate the Chicken

In a bowl, combine the chicken thighs, hot sauce, and buttermilk. Let marinate for at least 30 minutes.

Fry the Chicken

In a large pot, heat the vegetable oil over medium-high heat. Dredge the marinated chicken in cornstarch and fry for about 6-8 minutes per side until golden brown and cooked through. Drain on paper towels.

Assemble the Dish

Slice the biscuits in half, place a piece of fried chicken on the bottom half, spread spicy mustard on top, and cover with the other half of the biscuit. Serve warm.
