Brownie Preparation

    Melt the Chocolate and Butter

    In a heatproof bowl, combine the Callebaut dark chocolate and unsalted butter. Melt over a double boiler or in the microwave, stirring until smooth. Allow to cool slightly.

    Mix Sugars and Eggs

    In a large mixing bowl, whisk together the granulated sugar, brown sugar, and eggs until well combined. Stir in the vanilla extract.

    Combine Mixtures

    Add the melted chocolate and butter mixture to the sugar and egg mixture. Stir until fully combined.

    Add Dry Ingredients

    Sift together the flour, cocoa powder, and salt. Gradually fold the dry ingredients into the wet mixture until just combined. Do not overmix.

    Bake

    Preheat the oven to 180°C (350°F). Pour the brownie batter into a greased 9x9 inch baking pan and smooth the top. Bake for 20-25 minutes or until a toothpick inserted in the center comes out with a few moist crumbs.

    Cool and Serve

    Allow the brownies to cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Cut into squares and serve with vanilla ice cream, chocolate sauce, and caramel drizzled on top.
