Prepare the crust
In a medium bowl, combine graham cracker crumbs and melted butter. Mix until well combined. Press the mixture into the bottom of a 9-inch springform pan to form the crust.

Make the cheesecake filling
In a large mixing bowl, beat the cream cheese until smooth. Add the sugar and mix until well combined. Incorporate the ube puree, sour cream, heavy cream, and vanilla extract, mixing until smooth.

Add eggs
Add the eggs one at a time, mixing on low speed until just combined after each addition. Be careful not to overmix.

Bake the cheesecake
Pour the cheesecake filling over the crust in the springform pan. Bake in a preheated oven at 350°F (175°C) for about 50-60 minutes, or until the center is set and a slight jiggle remains.

Cool and refrigerate
Allow the cheesecake to cool in the pan at room temperature for about an hour, then refrigerate for at least 4 hours or overnight.

Slice the ube cheesecake and serve with scoops of coconut ice cream and a drizzle of mango caramel syrup.
