Prepare the Ingredients
Grate the summer squash and squeeze out excess moisture. In a large bowl, combine the grated squash, egg, milk, and olive oil.

Mix Dry Ingredients
In a separate bowl, whisk together the all-purpose flour, cornmeal, baking powder, salt, and black pepper.

Combine Mixtures
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the pea shoots.

Heat the Oil
In a large skillet, heat a few tablespoons of olive oil over medium heat.

Fry the Fritters
Scoop spoonfuls of the batter into the skillet, flattening them slightly. Fry for about 3-4 minutes on each side or until golden brown.

Serve with Raita
Serve the fritters warm with a side of raita and garnish with shaved radishes.
