Method

Prepare Mussels

    Clean the mussels

    Rinse the mussels under cold water, scrubbing the shells to remove any debris. Remove the beards if necessary.

    Steam the mussels

    In a large pot, combine the white wine and cleaned mussels. Cover and steam over medium heat for about 5-7 minutes, or until the mussels have opened up. Discard any that remain closed.

    Add crème fraîche

    Remove the pot from heat and stir in the crème fraîche until well combined.

Prepare Parsnip Sofrito

    Cook the sofrito

    In a skillet, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Add the minced garlic and diced parsnips, and season with salt and pepper. Cook until the parsnips are tender, about 10-15 minutes.

Grill Sourdough

    Grill the bread

    Spread butter on both sides of the sourdough slices. Grill them in a pan or on a grill until golden brown and crispy, about 2-3 minutes per side.

Serve

    Plate the dish

    In a serving bowl, place a generous scoop of parsnip sofrito, top with the steamed mussels and some of the sauce. Serve with grilled sourdough on the side.
