    Cook the Bacon

    In a skillet over medium heat, cook the maple double-smoked bacon until crispy. Remove from the skillet and drain on paper towels. Once cooled, chop into bite-sized pieces.

    Make the Croutons

    Preheat the oven to 375°F (190°C). Cut the sourdough bread into cubes. In a bowl, toss the bread cubes with olive oil, garlic powder, salt, and pepper. Spread on a baking sheet and bake for about 10-15 minutes or until golden brown, stirring halfway through.

    Prepare the Salad

    In a large bowl, combine the romaine lettuce, radicchio, and kale. Add the crispy bacon and croutons.

    Dress the Salad

    Pour the Caesar dressing over the salad mixture and toss gently until everything is well coated. Adjust seasoning with salt and pepper if needed.
