Prepare the Meatball Mixture
In a large mixing bowl, combine ground pork, minced garlic, finely chopped shallots, fish sauce, chopped cilantro, sugar, black pepper, salt, and the egg. Mix well until all ingredients are fully incorporated.

Form the Meatballs
With wet hands, shape the mixture into small meatballs, about 1 inch in diameter. Place them on a baking sheet lined with parchment paper.

Cook the Meatballs
Preheat the oven to 180°C (350°F). Bake the meatballs in the preheated oven for about 20-25 minutes or until they are fully cooked and golden brown on the outside.

Prepare the Chili-Garlic Oil
In a small saucepan, heat the vegetable oil over medium heat. Add the sliced garlic and sauté until golden brown and fragrant, being careful not to burn it.

Infuse the Oil
Once the garlic is golden, remove the saucepan from heat. Stir in the dried chili flakes and let the oil cool down to allow the flavors to infuse.

In a small bowl, whisk together the lime juice, sugar, fish sauce, water, and minced chili until the sugar is dissolved and the mixture is well combined.
