Crispy Potatoes with Sweet Onion Curry Sauce

Method

Cooking Instructions

  1. 1

    Prepare the Potatoes

Wash and peel the potatoes. Cut them into small, even-sized cubes to ensure they cook evenly.

  2. 2

    Season the Potatoes

In a large bowl, toss the cubed potatoes with olive oil, sea salt, and black pepper until they are evenly coated.

  3. 3

    Bake the Potatoes

Preheat the oven to 425°F (220°C). Spread the seasoned potatoes in a single layer on a baking sheet. Bake for 25-30 minutes or until golden brown and crispy, turning halfway through.

  4. 4

Make the Sweet Onion Curry Sauce

While the potatoes are baking, finely chop the sweet onion. In a saucepan over medium heat, add a tablespoon of olive oil. Sauté the chopped onion until translucent.

  5. 5

    Add Curry Flavor

Add the curry powder to the sautéed onion and stir for about 1-2 minutes until fragrant.

  6. 6

    Combine with Coconut Milk

Pour in the coconut milk, stirring well to combine. Let the mixture simmer for about 5-10 minutes until it thickens slightly. Adjust seasonings as needed.

  7. 7

    Serve

Once the potatoes are crispy and the sauce is ready, plate the potatoes and drizzle with the sweet onion curry sauce. Garnish with freshly chopped cilantro.
