    In a medium saucepan, heat 2 tablespoons of olive oil over medium heat. Add the finely chopped shallots and sauté until they are translucent, about 3-4 minutes.

    Stir in the sliced mushrooms, and cook for an additional 5-7 minutes, or until they soften and release their moisture.

    Incorporate Cream Sherry

    Pour in the cream sherry, and allow it to simmer for 5 minutes, letting the alcohol cook off and the flavors meld.

    Add Heavy Cream and Season

    Stir in the heavy cream, and season with salt, black pepper, and fresh thyme. Simmer for another 5-10 minutes until the sauce thickens slightly.

Goat Cheese Toast
