Prepare the Beans
If using dried Spanish white beans, soak them overnight in water. If using canned, rinse and drain the beans.

Sauté the Vegetables
In a large skillet, heat the Spanish olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent and fragrant, about 5 minutes.

Add Tomatoes and Beans
Stir in the diced tomatoes and the prepared beans (either soaked or canned). Cook for another 5-7 minutes, allowing the tomatoes to soften and blend with the beans.

Season the Dish
Add the chopped parsley, sherry vinegar, and season with salt and pepper to taste. Stir to combine all ingredients and let simmer for an additional 5 minutes.

Slice the house baguette and serve it alongside the Spanish white beans for dipping.
