Method

Roasting the Mushrooms

    Prepare the Oven

    Preheat your oven to 400°F (200°C).

    Clean the Mushrooms

    Wipe the crimini mushrooms with a damp cloth to remove any dirt. Trim the stems if necessary.

    Season the Mushrooms

    In a large mixing bowl, combine the cleaned mushrooms with olive oil, minced garlic, chopped rosemary, salt, and black pepper. Toss until the mushrooms are well-coated.

    Spread the seasoned mushrooms in a single layer on a baking sheet. Roast in the preheated oven for 20-25 minutes, or until golden brown and tender, stirring halfway through.

Making the Saffron Aioli

    In a small bowl, combine mayonnaise, saffron threads (soaked in a teaspoon of warm water if desired), lemon juice, minced garlic, and salt.

Sauteing the Kale
