Method
Roasting the Mushrooms

Prepare the Oven
Preheat your oven to 400°F (200°C).

Clean the Mushrooms
Wipe the crimini mushrooms with a damp cloth to remove any dirt. Trim the stems if necessary.

Season the Mushrooms
In a large mixing bowl, combine the cleaned mushrooms with olive oil, minced garlic, chopped rosemary, salt, and black pepper. Toss until the mushrooms are well-coated.

Roast the Mushrooms
Spread the seasoned mushrooms in a single layer on a baking sheet. Roast in the preheated oven for 20-25 minutes, or until golden brown and tender, stirring halfway through.
Making the Saffron Aioli

Combine Ingredients
In a small bowl, combine mayonnaise, saffron threads (soaked in a teaspoon of warm water if desired), lemon juice, minced garlic, and salt.

Mix Well
Whisk the mixture until smooth and creamy. Adjust seasoning to taste.
Sauteing the Kale

Prepare the Kale
Wash the kale thoroughly and remove the tough stems. Tear the leaves into bite-sized pieces.

Sauté the Kale
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add the kale and sauté for 5-7 minutes, or until wilted. Season with salt and black pepper.
