    Make the GNUDI

    In a mixing bowl, combine the ricotta cheese, all-purpose flour, egg, and salt. Mix until a soft dough forms.

    Shape the GNUDI

    Dust your hands with flour and take small portions of the dough, rolling them into small balls (about the size of a marble). Place them on a floured baking sheet.

    Cook the GNUDI

    Bring a large pot of salted water to a gentle boil. Carefully drop the GNUDI into the water. They are cooked when they float to the surface, which takes about 2-3 minutes. Remove with a slotted spoon and set aside.

    Prepare the cultured cream sauce

    In a small bowl, mix the cultured cream, lemon zest, and lemon juice. Season with salt and pepper to taste. Set aside.

    Sauté the kale

    In a large skillet, heat the olive oil over medium heat. Add the kale and sauté until wilted, about 5 minutes. Season with salt and pepper.

    Gently toss the cooked GNUDI with the sautéed kale. Plate the GNUDI and drizzle with the cultured cream sauce. Top with grated Pecorino cheese and serve warm.
