    Prepare the Beans

    Rinse the gigante beans under cold water to remove any impurities. Soak the beans in water overnight or for at least 8 hours to soften them.

    Cook the Beans

    After soaking, drain the beans and place them in a large pot. Cover with fresh water, bring to a boil, then reduce the heat and simmer for about 1 to 1.5 hours or until the beans are tender. Drain and set aside.

    Make the Marinade

    In a large mixing bowl, combine Spanish olive oil, lemon juice, crushed garlic, salt, black pepper, and chopped red chilies (adjust quantity to taste). Whisk together until well combined.

    Marinate the Beans

    Add the cooked gigante beans to the marinade, stirring gently to coat all the beans evenly. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably overnight to allow the flavors to meld.

    Slice the house baguette into thick slices. Optionally, toast the slices lightly in the oven until golden brown, about 5-7 minutes at 350°F (175°C).
