    Prepare the Filling

    In a large mixing bowl, combine the diced green apples, raw brown sugar, white sugar, and ground cinnamon. Toss until the apples are evenly coated. Set aside.

    Make the Empanada Dough

    In a separate bowl, combine 2 cups of all-purpose flour, 1/2 cup of cold unsalted butter (cubed), and a pinch of salt. Use your hands or a pastry cutter to mix until it resembles coarse crumbs. Gradually add 1/4 cup of cold water until a dough forms. Divide the dough into 12 equal portions and shape them into balls. Flatten each ball into a circle.

    Assemble the Empanadas

    Preheat your oven to 375°F (190°C). Take one dough circle and place a spoonful of the apple filling in the center. Fold the dough over to create a half-moon shape and crimp the edges with a fork to seal. Repeat with the remaining dough and filling.

    Bake the Empanadas

    Place the empanadas on a greased baking sheet. Brush the tops with simple syrup (1/4 cup of sugar dissolved in 1/4 cup of water) and sprinkle with raw turbinado sugar. Bake in the preheated oven for 20-25 minutes or until golden brown.
