Cook the Rigatoni
In a large pot of salted boiling water, cook the rigatoni according to package instructions until al dente. Drain and set aside.
Preparing the Sauce

Sauté the Vegetables
In a large skillet, heat olive oil over medium heat. Add the shallot, leek, and summer squash, and sauté until they soften, about 5 minutes.

Add Prawns
Add the prawns and red chili to the skillet, cooking until the prawns turn pink, about 3-4 minutes.

Incorporate Spinach
Stir in the fresh spinach and cook until wilted.

Make the Alfredo Sauce
Reduce the heat to low, then add the heavy cream and lemon juice. Stir well and let simmer for a few minutes until slightly thickened.

Combine
Mix in the grated Parmigiano-Reggiano cheese, and season with salt and black pepper to taste. Finally, add the cooked rigatoni to the skillet and toss to coat in the sauce.
